Week of April 13, 2026 - Weekly Meal Ideas

Lots of flavor and spring-inspired ingredients this week!

It’s officially asparagus season, and the Scallion Asparagus Salad is a perfect place to start.  It’s light, flavorful, and a great way to use up those hard-boiled eggs still hanging around in your fridge.  Pair it with the Strawberry Basil Chicken for a fresh, satisfying meal that feels like spring on a plate!

And when you are in a hurry, stir fries are always a win.  The Spring Onion, Asparagus & Potato Stir Fry is hearty, quick, and full of flavor – especially with the basil pesto bringing everything together.

Don’t miss the Sweet Orange Roasted Fennel & Radish Salad.  Roasting brings out a subtle sweetness in the vegetables, and when combined with fresh citrus, it creates a bright, refreshing dish that really stands out.  Be sure to check out this video to see just how simple it is to make.  And the Pineapple & Sausage Quinoa brings a fun, tropical twist to your weekly lineup – easy, delicious, and family-friendly.

The Fiesta Grilled Fish Tacos were inspired by a restaurant in Kansas City and the flavors are fantastic – they’re smoky, slightly spicy, and perfectly balanced with fresh, vibrant toppings.

Don’t forget about breakfasts and snacks – they can make or break your week.  The Almond Joy Inspired Baked Oatmeal is excellent for make ahead mornings (and honestly feels a little like dessert for breakfast), while the Birdseed Snack Mix is a great grab-and-go option to keep you fueled between meals.

Remember to savor eating in-season and visit your local farmers’ market – fresh, local ingredients don’t just taste better…they help you get the most nutrition out of every bite!

-Enjoy the flavors of the season – and don’t forget to savor the little moments along the way.  One day, you’ll look back and realize they were the big things.
